Classification: white Umbria IGP Grapes: Grechetto 60% and Sauvignon Blanc 40% Production area: San Venanzo Soils: volcanic origin, rich in minerals Vinification: collection of Sauvignon Blanc grapes takes place in the second ten days of September. Grechetto's at the end of September, early October. Vinification with must static settling and subsequent fermentation at 16 °C. for about 10 days. The wine with the first transfer undergoes to blend and then to stop on its lees, until the bottling in the following spring. Ageing: 6-8 months in steel vats. It can rest in the bottle for at least 2 years. Color: pale straw yellow with light golden reflections Aroma: the nose strikes for the exclusive presence of Mediterranean scrub scent, yellow peach, apricot hints, elderberry. Taste: fresh, pleasant, with an engaging drink. Slightly sapid and very mineral, persistent wine closes with an almond note. Alcohol content: 12.5% Volume Total acidity: 6.4 g/L Service temperature: 12 °c Food pairings: It goes well with fresh and medium-seasoned cheeses, light first courses and white meats. Excellent as an aperitif.
